In a large pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
Stir in the arborio rice and cook for 2 minutes, allowing the grains to be coated in oil and lightly toasted.
Add the saffron water and a ladle of warm chicken broth, stirring continuously until the liquid is absorbed.
Continue to add the broth, one ladle at a time, stirring constantly and allowing each addition to be absorbed before adding the next, until the rice is creamy and al dente, about 15 minutes.
Remove from heat and stir in the butter and grated parmesan cheese. Season with salt and pepper to taste.
