Add garlic and sauté for an additional 1 minute until fragrant.
Stir in tomatoes, potatoes, green beans, vegetable broth, bay leaf, thyme, salt, and pepper.
Bring the mixture to a boil, then reduce heat to low and let simmer for 20 minutes until vegetables are tender.
Add peas and corn, and continue to simmer for another 5 minutes.
Remove bay leaf, stir in parsley, and serve hot.
