Preheat the oven to 180°C. Cut the puff pastry sheet into even squares, then cut each square in half to form triangles.
Brush the pastry triangles with the whisked egg and sprinkle with sugar. Bake in the oven for 20 minutes until golden brown.
While the pastries bake, whisk together the double cream, icing sugar, vanilla extract, and pistachio cream until firm. Refrigerate to set.
Once the pastries are cooled, gently cut each triangle in half. Warm up some pistachio cream in the microwave for 5 seconds and stir.
Spread or pipe the pistachio cream into the pastry halves. Pipe the pistachio whipped cream on top and place the pastry tops back on.
Warm up a bit more pistachio cream and drizzle over the turnovers. Top with crushed pistachio nuts and dust with icing sugar. Serve fresh.
