Preheat the oven to 375°F (190°C).
In a large pan over medium heat, add olive oil and sliced onions. Cook until the onions are caramelized.
Add sumac, salt, and pepper to the onions and stir well.
Place the chicken thighs on top of the onion mixture, skin side up, and allow them to brown slightly.
Transfer the chicken and onion mixture to an oven-safe dish and bake in the preheated oven for 30 minutes, or until the chicken is cooked through.
Toast the flatbread slightly and place it on a serving platter. Spread the onion mixture over the flatbread and top with the chicken.
Garnish with toasted pine nuts before serving.
