Cube and fry bread until golden, then place aside.
Wash and boil chickpeas for 15 minutes or until soft to touch.
Mix greek yogurt, garlic, salt, and tahini in a bowl.
Add 1/2 cup of the hot chickpea water to the yogurt mixture and whisk through.
Layer your fatteh by placing fried bread on the bottom, then chickpeas, and top with the yogurt mix.
Fry pine nuts or slivered almonds in ghee until golden, then quickly pour onto the yogurt mix.
Garnish with chopped parsley.
