Cook the noodles until just shy of al dente. Drain and set aside.
Heat a splash of oil in a pan. Add the sliced mushrooms and cook until they’ve released their water and have browned. Stir in 1 tbsp dark soy sauce and set aside.
In the same pan, heat a splash of oil and add minced garlic, grated ginger, and chopped spring onions. Cook for a few minutes until fragrant.
Add chilli oil, hot sauce, gochujang, tomato paste (if using), and 1 tbsp dark soy sauce. Stir well to combine until caramelized.
Pour in coconut milk, water, and vinegar. Stir well and let it simmer until the flavors have deepened.
Ladle the soup over the noodles. Top with the cooked mushrooms, extra chopped spring onions, and sesame seeds if desired.
