Preheat the oven to 180°C (356°F).
Thinly slice the figs and chop the walnuts.
In a bowl, mix the goat cheese, honey, herbs, and walnuts.
Spread the mixture evenly over the puff pastry.
Arrange the fig slices vertically, leaving about 1 cm space at the bottom.
Cut the pastry into 10 even strips, roll each one up, and place on a parchment-lined baking sheet.
Brush with the egg yolk and milk mixture for a golden finish.
Bake for 30–35 minutes, until puffed and golden brown.
Drizzle lightly with honey before serving.
